Chef Doug needs to get e new butcher, one that feeds his cattle. Where's the marbling. This rib looks like it came from a starved steer.
The asparagus looks good, but where's the au jus and horseradish sauce. Prime Ribe should never be served without the proper accompaniments. The beef looks to be superbly finished but the cut sucks. Oh, and lose the carrots.

No horseradish, and I can pass on the asparagus and carrots.. but a nice au jus, and home baked dinner roll..
